Arising as a response to the wishes of chefs, fleur de sel (salt blossoms) came to be closely associated with haute cuisine where it came to be considered to be a gourmet product used to bring out the flavours of a range of extraordinary ingredients and recipes.
Meanwhile, its properties rapidly came to be known to all who appreciate the joys of the dinner table and cuisine and, although with a price that is understandably higher than common salt, the truth is that today it is to be found in kitchens all over the world.
A word of advice though – to preserve its properties it should be used after preparation as the final seasoning.
